Buttered Brussel Sprouts with Crispy Bacon and Peppers

Ingredients
- 16 Brussel sprouts, halved
- 4 rashers of Irish bacon
- 3 red peppers, sliced, seeds removed
- 200ml medium bodied white wine
- 1 tbsp butter
- 3 tbsp olive oil
- 1 lemon
- salt and freshly ground pepper
Cut bacon into 3-4" pieces and grill until crisp. Set aside.
In a pan with a lid, heat 2 tbsp of olive oil. Add peppers and season. Cook at medium high heat until the peppers are slightly charred, about 10 minutes.
In a second pan, heat butter and 1 tbsp of olive oil. Add Brussel sprouts. Cook for 5 minutes, turn and cook for another 5 minutes. Squeeze the juice of one lemon over the sprouts and season.
Assemble all ingredients onto individual plates, spooning any remaining juice over each serving.
